Mock Veggie Fried Rice- 65 Calories Only

The main reason for gaining weight is eating excess of carbohydrates and fats. Though veggies and fruits also contain substantial amount of carbs, but they are merely ignored owing to our habit of eating roti or rice in a meal. This actually got me thinking about substitutes, which are carbs but low in calories for the Indian palate. Recently I came across this very interesting low carb recipe by Fran Mccullough, which I would like to share with you. I have made a few changes in it, to adjust to the Indian diet. The best part about this dish is that you are not eating rice, but you get the feel of it. Didn’t get me? You’ll see.


Cauliflower- 1 head

Ginger- ¼ piece

Carrots (steamed and grated) – half cup

Peas (boiled) – a handful

Green chilli (chopped) – 1or 2 according to taste

Refined oil- 1 teaspoon

Salt to taste


Cut out flowerets of the cauliflower and grate them as you would for gobi parantha. You can also use a mixer if you want. The texture should resemble that of rice. Put the mock rice ( gobhi) into a sieve and steam it over a pan of simmering water. Once the cauliflower is 70 percent done take it off the gas. take care that the gobhi is a little tender when done, and not pulpy. Run the gobhi under cold water, to keep it crispy.

In a kadai heat the oil and add chopped ginger and green chillies. Add the carrots, peas and mix well. Now add the mock rice ( gobhi), salt and mix well. Cover it and let it cook on slow heat for about 5 minutes or till the veggies are done. Serve hot with dal or curd.

It tastes just like rice, is rich in nutrients and low in calories. What more can you ask for, so rice it up!
